Tomato, Pepper and Cucumber Storage

Tomato, Pepper and Cucumber Storage

Tomato, pepper and cucumber storage requires a room plan that follows the product, not simply the available space. Tomatoes arrive at different stages of ripeness, peppers can lose firmness as they lose moisture, and cucumbers are sensitive to both chilling and ethylene. Handling all three crops in one business does not make them suitable for one shared storage programme.

Frigovetta Refrigeration System designs, manufactures and installs facilities for growers, packing houses and fresh produce distributors. Our vegetable cold storage projects organise chambers around the crop varieties, delivery condition and quality required by each customer.

Tomatoes: Plan for Ripeness

A firm, mature-green tomato and a fully coloured tomato ready for sale need different handling decisions. The selected storage temperature should reflect ripeness, intended holding time and cultivar. Unsuitable cold exposure can interfere with normal ripening and affect flavour or appearance.

The facility should allow batches to be identified and released according to their condition. A later delivery may be closer to its sales window than stock received earlier. Space for inspection and accessible pallet positions help staff manage that difference without repeatedly moving the entire room.

If controlled ripening is part of the operation, its equipment and operating requirements are specified separately from ordinary refrigerated holding.

Peppers: Preserve Firmness and Appearance

Fresh bell peppers need protection from moisture loss, shrivelling and mechanical damage. Colour alone does not define the storage programme; maturity, variety and expected time before dispatch also matter. Prolonged exposure to unsuitable low temperatures can cause chilling injury.

Crates and cartons should support the fruit without compression or abrasion. Cold room evaporators are selected and positioned to provide the required cooling while limiting unnecessary drying at exposed load positions. Packaging ventilation and the loaded room arrangement are considered together so that cooling air can reach the product.

Cucumbers: Avoid Chilling and Ethylene

Cucumbers can develop chilling injury at temperatures that are suitable for some other vegetables. Symptoms may become more apparent after the fruit leaves storage, making a low room-temperature reading an unreliable measure of successful handling on its own.

Ethylene is another concern. Exposure can accelerate cucumber yellowing, so ripening tomatoes should not be treated as compatible neighbours in a shared storage atmosphere. The project needs to consider both chamber allocation and air movement between receiving, holding and any ripening areas.

Cucumber storage is planned around the intended sales period, with attention to variety, incoming condition and packaging rather than a universal setting for every shipment.

Separate Programmes Within One Facility

Independently controlled chambers can support these different requirements while sharing suitable receiving and dispatch resources. Room allocation should account for seasonal changes in the product mix, including periods when one crop occupies most of the available space.

Cold room refrigeration systems are specified for the operating range and cooling duty of each chamber. The assessment includes incoming product temperature, daily throughput and whether the room receives warm produce or already cooled stock. Temperature control alone does not establish compatibility between different crops.

Access for Grading and Dispatch

A packer may hold bulk crates before grading and finished cartons awaiting collection. Those stages need usable space and a clear route through the building. Returns, damaged produce and stock awaiting inspection should have designated positions within the operating plan.

Cold room panels form the insulated chambers, while sliding cold room doors provide access suited to the handling equipment. Door locations and aisle widths should allow staff to retrieve individual batches without exposing unrelated stock to prolonged warm conditions.

Define Your Storage Requirements

Our turnkey cold storage solutions combine the agreed insulated rooms, refrigeration equipment, doors and controls. Share the tomato ripeness stages, pepper and cucumber varieties, packaging formats, peak intake and dispatch schedule. These inputs establish which storage functions can share infrastructure and which need separate conditions.
