Broccoli and Cauliflower Storage

Broccoli and Cauliflower Storage

Broccoli and cauliflower storage needs to protect the part of the crop buyers examine first: the head. Broccoli loses appeal as green florets begin to yellow, while cauliflower can be downgraded by bruising, discoloration or damage to its compact curd. Cooling and careful handling must work together from receiving through dispatch.

Frigovetta Refrigeration System designs, manufactures and installs storage facilities for growers, packing houses and fresh vegetable distributors. Our vegetable cold storage projects account for the crop’s condition at intake, the packing method and the volume moving through the facility each day.

Broccoli Needs Timely Heat Removal

Broccoli has a high respiration rate, making prompt cooling particularly important after harvest. Delays allow deterioration to progress while the produce continues to release heat. The refrigeration duty must account for incoming crop temperature and the quantity arriving within each cooling cycle.

A delivery of warm broccoli creates a different load from stock already cooled before arrival. Cold room refrigeration systems are specified against these actual duties, including the heat generated by stored produce. Holding capacity alone does not establish how quickly a fresh harvest can be brought to its target temperature.

Where dedicated precooling is required, its method and capacity are selected to suit the crop, packaging and handling sequence.

Protect the Cauliflower Curd

Cauliflower heads need support and protection during stacking and movement. Pressure or rubbing against neighbouring heads and rough packaging can mark the curd. Cooling helps slow deterioration, but it cannot restore tissue already damaged during harvest or loading.

The project layout should accommodate the chosen carton or crate dimensions without encouraging overstacking. Room access needs to allow inspection and order selection with limited rearrangement. Different cauliflower colours and varieties should be assessed against their own quality requirements rather than a single visual standard.

Select Cooling Around the Pack

Broccoli may be handled in systems using water cooling or package icing, where suitable for the product and distribution programme. Cauliflower requires its own assessment of cooling method, packaging and handling; a process selected for broccoli should not automatically be transferred to cauliflower.

The project therefore needs to identify the cooling process before drainage and room loading arrangements are finalised. If ice or water forms part of the broccoli operation, packaging must tolerate those conditions and meltwater must have an appropriate drainage route. For air-cooled packs, openings and stacking must allow heat to leave the load.

Maintain Moisture and Colour

Both crops benefit from high relative humidity to limit water loss. Cold room evaporators and their controls are selected with the cooling duty and moisture requirements in view. Airflow should reach the stored product without unnecessarily drying exposed heads or wrapper leaves.

Broccoli is particularly sensitive to ethylene, which can accelerate yellowing. Cauliflower also needs protection from ethylene-related deterioration, including yellowing and loss of wrapper leaves. Room assignments should consider nearby ripening produce and shared air paths as well as temperature compatibility.

Keep Dispatch Moving

A packing house may prepare full pallets for wholesale customers alongside smaller mixed orders. The storage layout should provide access to both without leaving the remaining stock outside its intended conditions.

Sliding cold room doors are sized for the loaded handling equipment, while cold room panels enclose storage and any specified chilled staging areas. Service access, cleaning space and condensate drainage are planned around the operating layout rather than left to compete with finished pallets.

Define Your Project Requirements

Our turnkey cold storage solutions combine the agreed insulated rooms, refrigeration equipment, doors and controls. Share your broccoli and cauliflower volumes, arrival temperatures, packaging, cooling arrangements and daily dispatch pattern.

This scope covers fresh whole heads. Cut florets or ready-to-eat packs require their own processing and hygiene assessment, with refrigeration planned around the specified production flow.
