Potato Storage

Potato storage begins with the intended use of the crop. Potatoes supplied to fresh produce markets and those destined for crisps or French fries can require different storage programmes. Variety, harvest condition and the planned delivery date all influence how the facility should manage temperature, moisture and ventilation.

Frigovetta Refrigeration System designs, manufactures and installs potato storage facilities for growers, packers and processors. Within our vegetable cold storage projects, the refrigeration design is coordinated with the storage format and the sequence of operations from intake to unloading.

Fresh Market or Processing?

For fresh-market potatoes, appearance, firmness and the condition of the skin are important commercial considerations. Processing customers also assess characteristics such as sugar content and frying performance. Unsuitable low-temperature storage can encourage sugar accumulation in susceptible varieties and produce darker colour during frying.

The project therefore starts with the customer’s crop and market requirements. A single temperature selected for every potato variety and end use is not a sound basis for the design. Storage duration and any required preparation before processing should be agreed as part of the operating programme.

Curing Before Long-Term Holding

Recently harvested potatoes may need a curing period to support wound healing before entering their main holding phase. This requires suitable temperature, humidity and air movement. It should be planned as an operating stage, rather than assumed to happen automatically once the room is filled.

Incoming crop condition also matters. Wet, damaged or diseased loads need assessment before a routine curing programme is applied. Space to inspect deliveries and keep questionable batches separate helps operators avoid committing an entire chamber to unsuitable mixed stock.

Where curing forms part of the project, the equipment and controls must support both that stage and the subsequent transition to holding conditions.

Airflow Through Bulk or Boxes

Bulk piles and ventilated boxes create different airflow paths. A bulk store may require a dedicated distribution system beneath or through the pile, while boxed storage depends on the relationship between container openings, stacking and air channels. Room volume alone does not establish the ventilation requirement.

Fans, ducts and controls should be coordinated with the planned loading depth and resistance to airflow. Cold room refrigeration systems provide the required cooling duty, while crop ventilation distributes conditioned air through the stored potatoes. These functions need to work together to manage heat and moisture within the load.

Darkness and Moisture Management

Light exposure can cause potatoes to turn green. Door locations, lighting arrangements and the movement of stock should therefore limit unnecessary exposure during storage, while still allowing staff to work and inspect produce safely.

Moisture management requires a balance between limiting weight loss and avoiding condensation or persistent surface wetness. Cold room evaporators, ventilation and any specified humidity equipment are selected as part of that assessment. Checks within the stored crop help identify conditions that a single room-air sensor may not represent.

A Building Suited to the Load

Cold room panels provide the insulated enclosure, but bulk storage can also place substantial lateral loads on walls. Where potatoes are stored against a wall, a suitably engineered retaining structure is required; standard insulated panels should not be assumed to support the crop pressure.

For boxed storage, sliding cold room doors are sized around the handling equipment and stacked loads. Access for unloading, cleaning and maintenance needs to remain practical throughout the storage season.

Planning Your Potato Storage Facility

Our turnkey cold storage solutions bring together the agreed enclosure, refrigeration, ventilation, doors and controls. Share the potato varieties, intended market, storage tonnage, harvest schedule and preferred bulk or box arrangement. These details define the project around how the crop will actually be stored and sold.
