Mushroom Cold Storage

Mushroom Cold Storage

Mushroom cold storage protects a delicate product whose appearance can change quickly after harvest. Cap colour, firmness and the condition of the veil all influence the marketability of cultivated button mushrooms. A storage project needs to remove heat promptly, limit moisture loss and keep handling gentle throughout packing and dispatch.

Frigovetta Refrigeration System designs, manufactures and installs cold storage facilities for mushroom growers, packers and distributors. Within our vegetable cold storage projects, the installation is planned for harvested produce, with cooling and holding functions defined separately from the climate control used in growing rooms.

Match Cooling to the Picking Schedule

Mushrooms continue to respire after harvest, releasing heat as they do so. Several picking rounds feeding the packing area can create repeated cooling loads during the day. The design therefore needs to consider the timing of arrivals as well as the total quantity stored overnight.

For cultivated button mushrooms, prompt forced-air cooling is a recognised way to remove heat after harvest. The arrangement must suit the trays, cartons and pallet configuration used on site. Air needs a path through the packages, and cooling progress should be assessed using representative product temperatures.

Cold room refrigeration systems are specified for the agreed batch sizes, incoming temperatures and cooling schedule. Newly harvested loads should be accommodated without compromising the holding conditions of stock already prepared for sale.

Reduce Touches Before Dispatch

Mushroom caps are easily bruised. Pressure, rubbing and repeated transfers can leave marks that become more visible as the product moves through distribution. Refrigeration slows deterioration but cannot undo physical damage.

The layout should help operators move trays from packing to their assigned storage positions with as few transfers as practical. Containers need adequate support, and stacks should remain within the packaging’s load limits. Access to individual orders should not depend on repeatedly lifting or rearranging unrelated packs.

For white button mushrooms, browning and cap opening are useful quality observations. Brown varieties and other cultivated species need assessment against their own appearance and maturity criteria rather than a single colour standard.

Balance Moisture and Packaging

Moisture loss reduces mushroom weight and freshness, so the room design must consider humidity alongside temperature. Packaging helps protect the product and retain moisture, but it also affects airflow and the atmosphere immediately around the mushrooms.

Film selection and ventilation openings should be validated for the product, temperature and distribution period. Sealing packs more tightly is not a reliable way to extend storage life. Mushrooms continue consuming oxygen, and unsuitable packaging can create an unsafe low-oxygen environment. Modified-atmosphere packaging requires a validated product-specific specification.

Cold room evaporators and their controls are coordinated with the selected packaging and loading arrangement. Temperature stability and suitable air distribution help manage moisture loss without relying on prolonged direct airflow over exposed mushrooms.

Keep Picking and Packing Conditions Connected

Whole mushrooms, sliced products and packs intended for different customers may follow separate handling routes. A room designed for whole mushrooms should not automatically be treated as suitable for every prepared-product operation. Slicing, washing or other processing changes the project brief and requires its own hygiene and refrigeration assessment.

Where chilled order assembly is needed, it can be included alongside holding rooms. Automatic sliding cold room doors may suit frequent trolley or pallet movements, with controls matched to the traffic. Cold room panels form the insulated enclosure, with service access and cleaning arrangements incorporated into the layout.

Plan for the Product You Sell

Our turnkey cold storage solutions combine the agreed insulated rooms, refrigeration equipment, doors and controls. Provide the mushroom species, whole or sliced format, packaging, daily picking pattern and expected time before collection.

These details establish the cooling duties and working space needed for the operation. Storage settings and expected holding periods are then selected for the actual product, rather than extended from button mushrooms to every mushroom species.
