Grape Cold Storage

Grape Cold Storage

Grape cold storage needs to preserve the condition of the whole bunch. Firm berries can still lose their commercial appeal when stems turn brown, fruit begins to shrivel or loose berries collect at the bottom of a carton. For growers and exporters, the project must account for the time between harvest and cooling as well as the period spent in storage and transport.

Frigovetta Refrigeration System designs, manufactures and installs cold storage facilities for fresh table grapes. As part of our fruit cold storage projects, the layout and refrigeration design are developed around the varieties handled, packing format and planned delivery programme.

Protecting Stems After Harvest

Stem drying can begin before grapes enter the cold room. Delays in warm conditions increase water loss, so the route from receiving to cooling deserves attention during facility planning. A larger holding room will not resolve a bottleneck that leaves newly packed grapes waiting outside it.

Receiving space, cooling positions and pallet movements should be considered together. Where dedicated precooling is required, the project separates this duty from the refrigeration needed to hold fruit already at its target temperature. This helps establish how many batches the facility can process during peak harvest arrivals.

Cooling Through the Packed Load

Grape cartons may contain bags, liners and other packaging components that affect heat removal. The cooling arrangement needs to suit the complete pack used in production. Changes to carton openings or liners can alter the cooling response even when pallet dimensions remain unchanged.

Where forced-air cooling is used, airflow paths are arranged through the load, with bypass routes controlled. Product-temperature checks at representative positions help establish whether the packed grapes have reached the agreed target. A cold reading from the room sensor alone cannot confirm this.

Capacity for cold room refrigeration systems is assessed against the product load, batch timing and operating conditions. Packaging resistance is considered when designing airflow and assessing the required cooling time.

Holding Quality Between Orders

Storage conditions are set for the grape variety, fruit condition and intended holding period. Moisture management matters because stems and berries can lose water during storage. Cold room evaporators and their operating controls should provide the required heat removal without unnecessary drying from prolonged, excessive airflow.

Cold storage also needs to work alongside the packer’s decay-management programme. Grey mould can develop even at low storage temperatures; refrigeration does not replace inspection or removal of affected fruit. Any specialist packaging treatment should be agreed with the responsible produce specialist and reflected in the project requirements.

Keeping Bunches Intact

Berry detachment, often called shatter, is influenced by variety, maturity and handling. The facility should give operators room to move packed grapes without repeated restacking or avoidable impacts. Storage positions organised by batch and destination can make individual orders accessible with fewer movements.

For pallet handling, sliding cold room doors are sized around the load and equipment clearance. The arrangement of cold room panels defines the chambers and access routes, with space retained for inspection, cleaning and refrigeration maintenance.

Planning for the Delivery Route

A facility serving local buyers may need a different holding arrangement from one preparing grapes for longer export journeys. The project brief should include expected storage time, order sizes, loading frequency and the condition in which fruit must leave the site.

Our 6*turnkey cold storage solutions coordinate the insulated enclosure, refrigeration, doors and controls within the agreed scope. Share your grape varieties, packaging details, peak daily intake and delivery schedule so the proposal can be built around the actual movement of fruit through your facility.
