Mango Ripening Rooms

Mango Ripening Rooms

Mango ripening rooms help prepare harvested fruit for the flavour, texture and appearance expected at sale. A red blush on the skin does not necessarily mean a mango is ready to eat, and different cultivars can develop colour in different ways. The project needs to support a ripening programme based on the fruit’s actual condition and the customer’s delivery requirements.

Frigovetta Refrigeration System designs, manufactures and installs mango ripening facilities for importers, packers and distributors. Our fruit ripening rooms are planned around the varieties supplied, their handling history and the number of orders moving through the operation.

Establish Maturity Before Scheduling

Mangoes need adequate harvest maturity to develop acceptable eating quality. Ripening treatment cannot reliably compensate for fruit picked too immature. Arrival checks should therefore consider cultivar, supplier information and representative quality samples before a batch is assigned to a programme.

External colour alone is insufficient. Depending on the cultivar, assessment may include flesh colour, firmness and soluble solids, interpreted together rather than as interchangeable measurements. A room can provide controlled conditions, but it cannot remove the quality differences already present between unsuitable and well-matured fruit.

Batch records should also capture previous cold storage and any postharvest treatment history. These details help explain differences in ripening response and guide the timing of customer orders.

Assess Quality Beneath the Skin

A mango can appear attractive externally while showing uneven ripening or internal defects when cut. The quality-checking area should allow representative samples to be examined for flesh development and condition, with findings linked to the batch concerned.

This is particularly useful when several cultivars or origins arrive during the same week. Lots should be grouped according to compatible treatment needs, with space to keep questionable deliveries separate pending assessment. Sampling informs release decisions; it does not establish that every fruit in a pallet is identical.

Control Fruit Temperature Throughout

Mangoes produce heat as they ripen. The installation must be able to bring incoming fruit into the agreed treatment range and manage the subsequent heat load. Heating may be needed for cold arrivals, while refrigeration removes heat during the process.

Cold room refrigeration systems are specified around batch size, incoming temperatures and the selected programme. Product-temperature measurements help operators track conditions within the load, alongside room-air monitoring. Chilling and excessive heat can both affect mango quality, so changing the room setpoint requires consideration of the fruit’s condition.

Where ethylene is used to encourage more uniform ripening, dosing and exposure duration are defined for the crop programme. Ventilation manages carbon dioxide accumulation, while humidity control helps limit moisture loss. These functions need coordinated controls rather than independent settings that work against one another.

Fit Airflow to Export Cartons

Mango carton sizes, liners and pallet configurations can vary by supplier. The airflow arrangement should be checked against the packaging actually entering the facility. Gaps that let air bypass the fruit can undermine treatment even when the fans are running normally.

Cold room evaporators and circulation equipment are coordinated with the required air paths and thermal duty. Loading instructions should identify the positions and clearances needed for the selected design, including any requirements for partial loads.

Prepare Orders for Their Journey

The ripening endpoint should reflect the time between dispatch and consumption. Fruit for a nearby ready-to-eat display may need a different release condition from an order facing further distribution. Holding capacity and order-assembly space should follow those routes.

Cold room panels form the insulated treatment and holding areas. Sliding cold room doors are selected for the load dimensions, traffic and specified sealing performance. The layout should allow inspection and collection without unnecessary transfers of softened fruit.

Plan Your Mango Ripening Project

Our turnkey cold storage solutions are planned around the cultivar mix and delivery condition required for each market. Share your mango cultivars, source regions, arrival condition, packaging and target delivery specification. Batch sizes and sales schedules then establish the room capacity and operating sequence needed for your facility.
